What to do when new manager is just plain horrible?

I have been working at my job for 6 years, they hired a new manager who I nicknamed bi-polar Rob because he is fine one seconed and gets mad and yelling at you the next. I work in a bar and someone else bumped a table and someones drink splattered all over the floor. When this happens we have to okay a replacement drink with the manager ( I know it's dumb) and my manager,bi-polar Rob, screamed at me when I asked to speak with him about the replacement drink in front of the customer. Who was shocked that my manager started screaming at me to hold on and said for me not to worry about it. I just want to walk out but we can't live off my husbands salary. How do I deal?
